This green coffee was sourced in March 2025. Farmers story about how he is a land keep not owner, about surrounding nature and migratory birds making his farm a stopping spots still gives me chills. Being there you can feel Orlandos farm is a special place for coffee growing.

Finca Arimel, located in Río Chiquito, La Labor, Ocotepeque, sits at 1,630 masl and spans 14 manzanas. Founded by a dream in 1988, producer Arístides Melgar turned faith and determination into reality after years of learning and refining his craft. In 2005, he earned 7th place in the Cup of Excellence, marking the beginning of his journey into specialty coffee. His work combines discipline, gratitude, and devotion to both quality and the environment.
This lot was selectively handpicked at peak ripeness and
processed using a submerged washed long fermentation.
Fermentation occurred in sealed barrels for 15–20 days at 18–
24°C, with a final pH of 6.5 and 20°Brix. The coffee was then
dried on raised beds for up to 20 days until reaching 10.5 %
humidity. Finca Arimel is terrace-built to protect soil and wildlife, with fruit trees planted to nourish local birds and animals, reflecting Don Orlando’s belief that great coffee begins with harmony between people, faith, and nature.
