Jaime Nuñez, a coffee farmer from Palestina, Huila, faced adversity when a pest wiped out his passion fruit crop, for which he was renowned in Colombia. Undeterred, he turned his focus to specialty coffee production on La Reserva farm. Here, he cultivates exceptional varieties like Orange Wush Wush, Pink Bourbon, Laurina, Purple Bourbon or Lychee, and Caturra.
PROCESS:1. Only ripe cherries are harvested.2. A floatation process separates the highest quality coffee. The floating coffee is processed separately.3. Cherries are left to ferment in the hopper for 25 hours.4. Dry pulping is carried out.5. The coffee is taken to a canopy to dry in the sun for 10-15 days, depending on weather conditions.6. The coffee is ensured to reach a moisture content between 10.5% and 11.5%.
